Mealtime Monday: Three Ingredient Peanut Butter Cookies
Three ingredient peanut butter cookies? Yes. THREE. Sugar. Eggs. Peanut Butter. BOOM. Cookies. Done. A very dear friend of mine, who makes quite possibly the best peanut butter cookies in the entire world (really the best of any type of cookies, except chocolate chip, an award I will forever give to one Mrs. Tracy Pond. If you don’t know Tracy and haven’t had her cookies, I’m sad for you.) will probably put me through the wringer for posting this, as everything she bakes is a labor of love. BUT, even she will admit to you that, although not as delicious as hers (because she uses magical unicorn droppings; how can I compete with that?!), these cookies are GOOD. Really good. And most importantly, you’ll have time to whip them up in a pinch when your mother-in-law, who made everything from scratch using the wheat she grew in her backyard and ground using her mortar and pestle when HER kids were young, is coming to visit at the last minute. You can thank me later.
So. Three ingredient PB cookies. Don’t question it. Remember that Five Ingredients or Less cookbook I mentioned that basically helped my husband not starve to death during the first few years of our marriage? It came from that. Trust it. It will never steer you wrong.
Three Ingredient Peanut Butter Cookies
*1 c. creamy peanut butter
*1 c. sugar
Blend all ingredients together; set aside for 5 minutes. Scoop dough with a small ice cream scoop; place 2 inches apart on an ungreased cookie sheet. Make a crisscross pattern on top of each cookie using the tines of a fork; bake at 350 degrees for 10-12 minutes. Cool on baking sheets for 5 minutes; remove to wire rack to finish cooling. Makes 12-15
