Easy Weekday Dinner

This feeds a family of 4 with some leftovers!

Chicken and Rice Casserole


-About 1.5 lbs of chicken thighs (thighs are cheap and very tender)
-1 can cream of mushroom soup
-1 packet of onion soup & dip mix
-4 cups of brown rice
-Fill the empty can of mushroom twice with water


• Preheat oven to 350

• In a 9×13 baking dish place chicken skin side down

• Add rice

• Mix onion soup mix, mushroom soup, and water in a bowl

• Pour over rice as evenly as possible

• Cover the dish with alumni foil

• Bake for about an hour
