Easy Summer Meals

I hate cooking in the summer time. I would rather eat a celery stick and cottage cheese straight from the container than cook after a long day at work and when it’s 115º outside. But I have learned a few quick tips so that I spend as little time as possible in the kitchen.
Chicken Breasts
Brine (Salt Water) 15 min
Brush with Butter
Season with Spices
Oven cook 450º for 15-18 mins
Rest for 5-10 mins
Steaks
Salt,Pepper, Olive Oil/Butter
Sear in pan 3-6mins on each side
depending on how rare or well you like
400º oven 5-10 mins
Pork Chops
Buy Pre Seasoned
Drizzle with fancy olive oil
Oven cook at 400º for 20-28 mins
depending on thickness
Shrimp (Sheet pan Fajitas)
Buy precooked, no tails
With Red/Green/Yellow Peppers, Onions, Jalapeno
toss on a sheet pan with a little Olive Oil
450º for 8 mins, Broil for 2 mins
Top with Lime & Cilantro
Serve with tortillas

I strongly encourage you to purchase a mandolin slicer for fast veggies. Also glass containers for fruit/veg storage are best and adding a paper towel to the bottom of containers often helps keep produce fresher longer.
